Baked Falafel

16 oz. chickpeas, drained and rinsed (or 2 cups)1/2 c. bread crumbs2 T flour1 onion, chopped2 cloves garlic1/2 t baking powder1 t cumin1 t coriander1/4 t cayennejuice of 1 lemon1/4 c. flat-leaf parsley1/2 t salt
Pulse chickpeas and bread crumbs in a food processor until crumbly.
Add the rest of the ingredients and pulse until thoroughly combined.
Transfer to bowl, cover with plastic wrap, and let sit for at least 30 minutes in the fridge.
(In the meantime, I start prepping everything else, like Tahini Dressing, slicing veggies, etc.)
Preheat oven to 400*. Prep a baking sheet with parchment paper.
With wet hands, pull bits of dough out of the bowl 2 T at a time and roll/flatten into small disks. Place on baking sheet.
Bake for 25 minutes, flipping falafels at about 15 minutes.
Makes 10-11 falafels
