Garlic Tomato Basil Penne Pasta

Ingredients
16oz uncooked penne pasta1 tbsp extra virgin olive oil6 cloves garlic, finely chopped28oz (3.5 cups) diced tomatoes4 tbsp fresh basil leaves, chopped1 tsp salt.5 tsp ground black pepper
Directions
Cook pasta per package & drain.

While cooking the pasta, heat the olive oil in a 12 inch skillet over medium-high heat. Add the garlic and cook for 1 minute, stirring frequently. Add tomatoes and cook for another 5-9 minutes, or until tomatoes are soft and sauce is slightly thickened. Add basil, salt, and pepper. Cook for another 1-2 minutes.

Pour sauce into pot with drained pasta.

Makes 6 servings.

    I made this for an office party and it was a hit. The only thing I did differently; I used 4 teaspons of dried basil instead of fresh, and tossed in about a quarter cup of reduced fat feta cheese. - 4/15/11
