Ingredients
1 1/2 cups elbow macaroninonstick cooking spray1 Tbsp. olive oil1 Tbsp. flour1/2 cup nonfat milk1/2 cup cauliflower or butternut squash puree1 1/2 cups shredded reduced-fat cheddar cheese4 oz. reduced-fat cream cheese1/2 tsp. salt1/8 tsp. pepper1/8 tsp. paprika
Directions
Cook macaronic according to package. Coat large saucepan with cooking spray and heat over medium heat. Add the oil, flour and cook, stirring constantly, until the mixture is a thick paste but not brown. About 1-2 minutes. Add milk and cook, stirring occasionally until mixture thickens. Add vegetable puree, cheddar & cream cheese, seasonings and stir until cheese is melted and smooth. Stir in macaroni and serve warm.
