Crust:1.25 Cup unbleached flour1 tsp sugar1/2 tsp baking powder1.25 tsp salt3 tbsp butter2 tsp veg. oil3 tbsp cold waterPie "Filling":2-3 applesApricot fruit spread2 tbsp sugar2 tbsp ground cinammonCut two or three apples in two halves, core and slice thinly and evenly. Fan out and spread in the crust. Sprinkle with 2 tbsp of sugar, and 2tsp of ground cinnamon. Bake at 350 F for thirty minutes.Cook 2 tbsp of apricot jam in water, until it thickens a little. Brush entire pie with jam. Bake for another 15 minutes or until crust is done.
