Ingredients
1 tbsp olive oil1 medium onion8 oz whites slice mushrooms4 oz assorted wild (crimini) mushrooms1 c shredded carrots1 garlic clove (minced)1/4 tsp dried thyme4 cups beef broth3/4 c quick cooking brown rice1 1/2 cup black beans
Directions
place oil in pan and saute veggies ... add broth and rice and cook until rice is done
