Chicken Chili (white chili)

Ingredients
4 chicken breast or about 3 cups of roasted chicken chopped, 2 cans of cantonelli bean or white beans, 1 onion, 1/2 a jalapeno pepper, 2 peeled carrots, 3 cup chicken broth 1 cup water, 1 packet of chili seasoning mix.
Directions
add everything to a large stock pot or you crock pot and cook until carrots and onion are completely tender.

Optional I took my stick blender to one can of the beans before adding them to the chili for and extra creamy texture.

    I just made this and it is super yummy. I had to add a bit of flour to thinken it up some but that's about it. Also discovered that 1 serving=1 cup! :) - 2/10/08

    I made it but I used 2 jalapeno peppers dice up small and a 10 sliced mushrooms. I smashed up one of the cans of beans and I think next time I will add another can or even a can of kidney beans. A great base to add to, more vegies too. - 2/22/08

    this chili is delicious! very filling and hits the spot. for a milder version use a mild green chile pepper instead of the jalapeno. i also used some mozzarella on the top - it really brings out the flavor in the chili. I'll definitely be making this again. A new favorite! - 2/8/08
