Fritters-Roasted Capsicum and Sweetcorn

Ingredients
2 X 400g tin corn kernels1 red capsicum, finely diced1/4 cup parsley3 eggs1/2 cup fresh bread crumbsfreshly ground pepperspray olive oil
Directions
Place the corn into a large bowl and add the capsicum and parsley. Add the 3 eggs and the breadcrumbs, season with pepper and combine well.
Heat fry pan to moderately hot and spray with a little olive oil. Spoon the batter mix carefully into the pan, allow to cook for 1 1/2 minutes or until golden brown underneath. Then turn over and continue cooking for a further 1 1/2 minutes. remove from heat and keep warm until you have cooked them all.
Place three fritters onto 6 plates and serve with green salad. Serve immediately.
