Spicy Chicken Potato Gumbo

4 ounces precooked chicken diced1 medium potato diced1 can (3.5 cup) diced tomatoes no salt added1/3 cup chicken stock1/3 cup water3 ounces onion chopped1 Tablespoon Canola Oil1 Tablespoon minced Garlic4 ounces sliced mushrooms1 small red pepper chopped1 Tablespoon onion powder1 Tablespoon garlic powder1 Tablespoon curry powder1/8 tsp Tumeric1/8 tsp ground ginger1/2 tsp chili powder
In medium sauce pan, boil the diced potatoes until tender (approx 6-8) minutes.
While potatoes are cooking, in a large saute pan add oil, onion, garlic, and peppers. Saute on medium until onions have a slight brown. Add in tomatoes, chicken, chicken stock, mushrooms, potatoes and seasonings. Bring everything to a boil, reduce heat to low, cover and simmer for 10 minutes.
