1-1/2 cups Self rising white corn meal mix1 cup low fat buttermilk1 large egg1/2 cup yellow sweet corn kernels
Preheat oven to 450 degrees F. Mix all ingredients thoroughly and place in a cast iron skillet coated with oil or butter spray. Bake 20 minutes until brown.
