whipped curried coconut cauliflower

Ingredients
* Cauliflower, raw, 1 head, medium (5-6" dia) * Coconut, raw, 1 cup, shredded * *A Taste of Thai - Red Curry Paste, 4 tsp * Water, tap, 1 cup (8 fl oz) * Garlic, 2 clove
Directions
Place chopped cauliflower, shredded coconut, , garlic, curry paste, and water in a pot and bring to boil.
Cover and heat on low until cauliflower is fork-tender.
Mash or whip in food processor/blender.
Serve with protein of choice.
