Jo-Jo's Cherry Bran & Oatmeal Muffins

1 cup Frozen Cherries, thawed & quartered1 cup Bran Flakes1 cup Light Buttermilk1 Organic Brown Egg1/4 cup Unsweetened Apple Sauce1 tsp Vanilla Extract2/3 cup Dark Brown Sugar, packed1 tsp Baking Powder1/2 tsp Baking Soda1/2 tsp Sea Salt3/4 cup Whole Wheat Flour1/4 cup Unbleached White Flour1 T. Organic Rolled Oats
Preheat oven to 350.
In a large bowl cover bran flakes with buttermilk and allow to sit until flakes have softened (about 20 minutes). Add the next 7 ingredients, stirring with a spatula until well incorporated. Add the flours and mix well. Gently fold in the cherries. Divide the batter amongst 12 muffin cups filled with paper liners. Tap the muffin pan a few times on the kitchen counter to get rid of any air bubbles in the batter. Lightly sprinkle each muffin with rolled oats.
Bake 15-17 minutes or until toothpick inserted in the center comes out clean. Allow to cool completely.
