Jo-Jo's Greek Vinaigrette

Ingredients
1/4 cup Fine Red Wine Vinegar2 Organic Garlic Cloves, minced (or 1 tsp jarred)1 T. Organic Lemon Juice1/2 tsp Dried Basil1/4 tsp Dried Oregano Leaves (crushed not ground)1 cup Olive Oil1/4 tsp Sea SaltDash Freshly Cracked Pepper
Directions
Combine all ingredients with a wire whisk. Cover and chill 1 hour to overnight for flavors to fully develop. Keeps well in the 'fridge up to 1 week.

    Maybe there was just too much dressing for the amount of salad, but I used 3/4cup of oil instead and you could probably get away with less. It was yummy though, thanks! - 10/26/11
