Cauliflower and Broccoli Casserole

1 cup broccoli1 cup cauliflower2-3 slices of Kraft American Cheese (or to taste. I add enough to lightly cover the top of the veggies)10-15 crushed Ritz crackers1 Tbs butter (optional)
Par cook the broccoli and cauliflower until just tender. I normally sautee the veggies in a non-fat cooking spray for about 5-10 minutes. Once tender, place veggies in small casserole dish. Top with cheese and crackers. Crumble butter over the crust, if desired - it makes for a nice golden crust but it tastes just fine without it :)
Bake in a 400* oven for 10-15 minutes, until crust is golden and crispy and the cheese is melted through.
