Stuffed Peppers-Gluten & Dairy Free

Ingredients
1.5 lbs of meatloaf mix2 cups of gluten free brown rice1 onion, finely chopped1/4 cup frozen peas2 TBSP tomato past 2 tsp minced basil4 garlic cloves, minced6 green bell peppers-tops cut off and seeded1 15oz can of tomato sauce
Directions
Preheat oven @ 350 Degrees F. In a large bowl, combine the beef , pork, veal, rice, onion,peas tomato paste, garlic basil, salt & pepper. Loosely stuff peppers with mixture;stand them in a baking dish or casserole. Pour tomato sauce over peppers; add enough water so that liquid comes about 1/4 up the sides of the peppers. Cover with foil and bake, basting occasionally with the juices, 30 minutes. Uncover and bake until the peppers and rice are tender and the filling is completely cooked, about 20 minutes longer. Let stand 5 minutes before serving.
