Chicken Chilli

Ingredients
1 T olive oil1 onion chopped (1 cup)2 lbs chicken breast, diced6 cloves garlic, minced4 cups chicken stock6 cups navy or cannellini beans (or 4 cans, rinsed & drained)1 1/2 T ground cumin2 t oregano4 oz can mild green chillies1 t salt
Directions
Heat the olive oil over medium heat. Saute the onion until soft. Add diced chicken breast & continue to saute until done (approximately 6 minutes). Add garlic & cook for another minute. Add chicken stock, beans, cumin, oregano, salt & green chillies. Stir to combine & bring to a simmer. Let simmer for 30 minutes over medium-low heat.

**Optional: Add 1 T of sour cream & shredded cheddar cheese. (Not included in nutritional calculation.**
