Lentil Zucchini Couscous Soup

2 tsp olive oil2 med. stalks celery, chopped1 large onion, chopped3 large carrots2 medium zucchini1 cup red lentils1/4 cup couscous1/2 tsp black pepper1/2 tsp basil1/2 tsp salt (optional)10-12 cups water or vegetable broth
1. Chop the onions and celery; over medium heat, sauté in 2 tsp olive oil for 10 minutes(add a little water or vegetable broth if the vegetables stick)
2. Chop or shred the carrots and zucchini; add to the vegetable mixture and sauté for another 7-10 minutes.
3. Add the lentils, pepper, basil, (salt) and water and bring to a boil.
4. Cook over low heat, partially covered, for 45 minutes.
5. Add the couscous and continue to cook for an additional 15 minutes.
Makes 8 servings. Reheats well.
