Cole Slaw

Ingredients
1 large head red cabbage1 medium red onion1 medium golden delicious apple2 tbsp red wine vinegar4 tbsp cold-pressed sesame oil4 oz creme fraiche OR coconut milk (optional)1/4 tsp sea saltwhite pepper (optional)
Directions
Shred cabbage and add salt. Cover in boiling water with a lid, let sit for one hour and drain.

Chop onion and apple. Mix with cabbage. Add oil, vinegar, and any creamy addition and/or pepper.

Tastes better if it sits at least a few hours.

Serving Size: Makes one cabbage worth of slaw
