Potato-leek soup (1.25 c, no cream)

Ingredients
4 leeks2 Tbsp olive oil1 lb red potatoes4 c chicken or veggie stock (not calculated)1 bay leafsalt & pepperparsley (optional)
Directions
Slice up leeks thinly & wash well. Heat up oil in dutch oven; add leeks & saute until golden (10 min). Peel potatoes & cut into 1/2" dice. Add potato, stock, bay leaf & salt & pepper to taste. Boil, then simmer until potatoes are tender (~20-25 min). Remove bay leaf. Lightly mash potatoes. Add parsley if desired.
