3 pounds pork6 garlic cloves, crushed1/2 cup onions3 T. vinegar1/4 cup soy sauce1/4 tsp. salt1/2 tsp. black pepper2 T.cooking oil1 10g pack Mama Sita's Achote powder AKA Achuette Annatto Powder2 1/2 cups hot water
Cube pork. Marinate in garlic, onion, vinegar, black pepper, and soy sauce for at least one hour. Disolve Mama Sita's Achuete ( Annatto Powder) also AKA Achote in Chamorro cooking, in 1/2cup hot water. Mix with the other 2 cups of hot water. Add oil to skillet, heat and add pork along with the marinade.Bring to a boil. Add the achote water. Reduce heat and simmer Slowly stir in cream of rice. Reduce heat and simmer 50 minutes. Serve over steamed rice.
