low carb ground beef soup

Ingredients
1 cup Carrots chopped1 cup Celery chopped 1 cup Onions chopped4 c zucchini4 cups Beef broth4 cups Water1lb ground beef 1 (14.5oz) can of diced tomatoes1 tsp Salt (or less if you prefer)1 tsp Pepper, black1/2 tsp Basil1/2 tsp Oregano
Directions
in soup kettle or dutch oven,cook ground beef untill almost done, add carrot, celery and onion iuntil tender (about 5 minutes)

Add the broth, water, beef, tomatoes, barley, salt, pepper, basil, and oregano; bring to a boil.
cook about 1 hour

Serving Size: makes( 8) 2 cup servings

    Quite good, but a bit bland. I added some Worcestershire. Also, I think next time I will increase the ground beef to 1-1/2 or 2 pounds. I thought it was a bit thin on the protein, however this soup does have great potential. I'll be tweaking it! - 10/22/13
