Whole Grain Pancakes

Ingredients
1/2 cup oat bran1/2 cup oatmeal (steel-cut)1 cup wheat flour2 tsp baking powder4 tsp ground flax2 large eggs1/2 cup applesauce1/2 cup cottage cheese (I used 2%)1 cup milk (nonfat)1 1/4 to1 1/2 cup 1 tsp vanilla extractcinnamon, optional
Directions
Optional - blend oatmeal and cottage cheese to smooth out texture.

Preheat griddle.
Combine all ingredients in bowl.
Mix with mixer for about 60 seconds. Check thickness - if too thick, add more water.
Cook on griddle with non-stick cooking spray (since these will stick, since there is no oil in them).
Enjoy!

Serving Size: Makes 14- 18 pancakes.
