Baked Mexican Egg Rolls

Ingredients
Directions
1 pound lean ground chicken1 package egg roll wrappers (20 in the type I purchase)1.25 cup 2% shredded cheese1.25 cup rinsed black beans1/2 tsp salt1 tsp cumin1 tsp cilantro1 small onion2 cloves garlic diced1 can rotel tomatoes with chilis
Preheat oven to 425 degrees
Spray baking sheet with olive oil spray
Spray skillet with olive oil spray
Begin to brown garlic and onion
Add chicken and spices. Cook until browned.
Drain tomatoes and add once chicken is cooked.
Add rinsed black beans to mixture and warm through.
Assemble as follows
2 tbsp of meat mixture and 1 tbsp cheese per egg roll.
Spray top of egg rolls with olive oil spray.
Bake for 15-20 minutes. Flip as needed to prevent burning of wrapper.

I never make ANYTHING that gets as many compliments from my wife and friends as these eggrolls did! I made a slight adjustments using 8" burrito wraps instead of the eggrolls ( i couldn't find them)...and they came out soooooooo well. I was able to even use the extra meat in a salad! - 2/21/10

this was an awesome recipe. the only thing i did different was i bought some taco flavored turkey meat fro kroger. i did not have to add all the spices. i did not use the rotel don't; like it real hot with spices. added refried beans. took it to my bowling friends and they loved it. my husband loved - 1/7/09
