Fair Sausage Peppers and Onions

Ingredients
2 Tbs. olive oil 1 clove garlic finely minced1 bell pepper cut into strips1 medium onion cut into strips1 6oz can tomato paste
Directions
Heat oil in skillet, saute garlic. Add peppers and onions and saute until soft. Add tomato paste and 3 or 4 cans of water. Simmer until veggies are done. Cover your favorite sausage on a bun or without. Can also simmer your sausage in with the mixture.

Serving Size: Makes about 8 1/2-cup servings servings
