Baked Bean Soup (Crockpot)

Ingredients
3 c baked beans2 stalks celery1 large onion1.5 cups diced tomatoes8 oz tomato sauce2 c fat-free chicken broth
Directions
Place all ingredients into crockpot. Mix well, cook on LOW 6-8 hours.

For a stovetop version, saute the onion and celery first, then simmer soup for 25 minutes.

Makes four 1 1/2-cup servings.

    This is by far the most nutritious recipe in my cookbook. I used it as a first course at Thanksgiving to tide folks over until the turkey was ready. It was easy, and kept warm in the crockpot, and didn't need any tending. - 12/15/09
