Black Bean & Corn Salsa

Ingredients
1- 15 oz. can black beans1- 12 oz can whole kernel corn1- medium tomato, finely diced1- small red onion, finely diced1/4 c lime juice1 tsp cumin powder
Directions
Drain and rinse beans and corn. Combine in a medium bowl with diced tomato and onion. Mix and add lime juice and cumin. Serve with tortilla chips.

Refrigerate any leftovers

Servings vary by individual....I divided this recipe by 10 servings.

    I added about 1/3 of a red bell pepper diced, cut back on the cumin (1/2 tsp) and added a handful of fresh chopped cilantro. I only had a Vidalia onion, but it was still delicious. A definite repeat recipe! - 7/10/14
