1/2 cup milk1 Tbsp canola oil1/2 cup apple sauce1 1/2 cups mashed bananas1 1/2 cup flour1/2 cup old fashioned rolled oats3 tsp baking powder1 tsp salt1 1/2 tsp cinnamon1/2 cup chopped pecans1/8 cup dates1/4 cup raisins
Preheat oven to 400*. Mix together milk, egg, oil, apple sauce, and mashed bananas. Add flour, oats, baking powder, salt, and cinnamon. Mix until just combined. Add nuts, dates and raisins. Pour in to muffin pan, sprayed with Pam.
Bake at 400 degrees for 22 minutes, or until muffin tops bounce back up when pressed.
* 1/2 cup wheat germ can be substituted for 1/2 cup flour.
