Ingredients
1 c. black beans 1 c. red beans2 c. brown rice1 lb ground turkey2 cans of canned tomatoesbeef broth (enough for 3 cups)1/2 c. onion1 T. garlic2 t. italian seasoning (or to taste)2 t. salt (or to taste).5 t. pepper (or to taste)
Directions
I use dried beans so the prep time takes a little longer. (You can use canned beans just buy one or two cans of each and rinse well before adding to the crockpot). I put one cup of each black and red beans in a pot with water and boil for at least an hour or until the beans are soft. (Do not add beans to the crock pot until soft as the tomatoes do something that will keep the beans hard.) I also put the rice on to boil on the stove (follow instructions on the package). The turkey is cooked in the microwave for 5-6 minutes and then crumbled. While the beans are cooking, place the tomatoes, ground turkey, seasonings, rice, onion, garlic, and beef broth into the crockpot. After the beans soften, drain them and rinse them off before adding to the crockpot. You can cook the dirty rice on low for an all day cooking or on high for a couple of hours to heat through.
