Brown Rice "French Toast"

Ingredients
1/3 cup cooked brown rice (leftovers!)1 large egg1/8 c. milk (more or less, depending on rice dryness)1 tsp cinnamon1/2 tsp nutmeg
Directions
Throw ingredients into a blender or use hand blender to whirl into oblivion. Pour onto heated, stick-free pan or griddle (or use a bit of no calorie spray). Cook slowly; as it begins to dry out, flip over to cook other side.

Makes one filling breakfast serving.

Alternatives: Leave out the spices, top with salsa and a sprinkle of cheese for a savory meal.
