1/2 cup whole wheat flour1/2 tsp baking soda 1/2 tsp salt1 egg1 tsp vanilla extract 1/4 cup plus 2 tbsp apple sauce1/4 cup splenda1/4 cup oatmeal1/4 cup Fiber One Honey ClustersOPTIONAL: (If you make fresh juice from a juicer) for added Fiber, you can add 1/4 cup of Pulp from the fresh fruits that you juice (apple, orange, & lemon pulp are my favorites)
In a small bowl mix together the flour, salt and baking soda and set aside. In a medium bowl using an electric mixer, combine the egg, apple sauce, and splenda until blended. Add vanilla extract and blend. Then add the dry ingredients to the egg mixture and blend well. Add the oatmeal and stir in until well mixed. Spray the muffin tin with non stick cooking spray and divide batter evenly into muffin tin. Crush the Fiber One Honey Clusters cereal and sprinkle it on top of the muffin batter. Then bake at 350 degrees for 20 minutes, or until a tooth pick inserted in the middle comes out clean.
