Parisbaby's Perfect Meatless Pasta Sauce

Ingredients
2 tsp Extra Virgin Olive Oil1 cup Onions, chopped 1/2 cup Celery, diced 1/2 cup Green Peppers, chopped3 cups Yellow/Orange/Red Peppers, diced2 cloves Garlic, crushed1 pkg Yves Veggie Cuisine - Italian Veggie Ground Round2.5 cups tinned Diced Tomatoes (no salt added) - about 1 1/2 -2 tins1 tin Tomato Paste (no salt added)1 tbsp Oregano, ground1 tbsp black pepper1 tbsp Basil1 tsp Tabasco Sauce2 tbsp Soy Sauce2 tsp Worcestershire Sauce1 tbsp Lemon Juice, bottled or fresh
Directions
Heat olive oil in large fry-pan at medium heat; add onions, celery, peppers, and garlic and gently fry for 5 minutes. Add Italian Ground Round; combine and fry for another 6-8 minutes. Add tomatoes and tomato paste; combine and let mixture cook at medium for 10 minutes (use a spatter screen if available), stirring frequently.

Taste for flavour at this stage; add herbs. If desired, add soy sauce, Worcestershire sauce and Tabasco sauce to taste. Stir and let simmer at medium-low for 10 minutes, stirring occasionally. Just prior to serving, add lemon juice (a chef trick to "brighten up" flavours!) and stir in.

Makes 6 generous portions; serve over pasta or rice, or cook a little longer to thicken and use for Sloppy Joes!
