Gluten-free Graham Crackers

2.5 oz each: Sorghum FlourBrown Rice FlourTapioca FlourSweet Rice Flour1 t Cinnamon1/2 t Baking Soda1/2 t Cream of Tartar1/2 t Xanthan Gum1/4 t Guar Gum1/2 t Salt3.5 oz Butter3 oz Honey3-6 T cold water
Mix flours. Add the rest of dry ingredients and mix thoroughly. Cut in Butter until it reaches a cornmeal consistency. Mix Honey and Water in a separate bowl until dissolved. Add to dry mix and cut in thoroughly. Add more water as needed until dough forms a slightly damp ball. Put 1/2 of dough on parchment paper and cover with another sheet of parchment paper. Roll out to about 1/4 inch. Refrigerate 15 minutes, then cut and pierce with a fork. Bake at 350 for 15-20 minutes.
