Broccoli Beef Mini Quiche

Ingredients
9 egg whites, beaten1 Yellow Onion, diced1/3 lb. 93% lean ground beef1 cup Cooked Broccoli, chopped fine1 1/2 Tablespoons lite Soy Sauce1/2 teaspoon Garlic, minced1/2 teaspoon Ginger, minceda few twists of Black Pepper
Directions
1. Preheat oven to 350F.

2. Place the leftover broccoli in a mini food processor and pulse until finely chopped; set aside. Saute onion until golden.

3. Add sirloin and saute until no pink is seen. Add ginger, garlic, soy sauce and seasonings and cook 1 minute more. Set aside to cool.

4. When cool mix all ingredients together. Spoon into lightly sprayed mini muffin tins.

5. Bake for 30 minutes at 350.

Serving Size: Makes 24 mini quiches
