10 oz Chicken breast5 cups cooked Fettuccine1 tbsp butter (margarine is BAD, at least you can work off the butter, trans fats won't go away.)5 tbsp good quality balsamic vinegarminced fresh basil leaves to your taste (I like them, so I used around 8)fresh tomato to taste (i used 2 medium sized), diced5 oz fresh part skim mozzarella cheese, cubed5 jumbo black olives, minced
Heat up a skillet and melt the butter. Cooke the chicken to desired doneness (just kidding, make sure it's thoroughly cooked!!) Add balsamic vinegar to deglaze the pan and save.
Add the the ingredients to fettuccine and toss with balsamic vinegar deglaze. Chill and eat, or serve right away. It doesn't lend well to re-heating, but it could be that I just don't like wilted basil.
