Low-Fat Chicken Enchiladas

1.5 lbs. cooked shredded chicken breast1/4 cup onion, finely diced16 oz. fat free sour cream1 can 98% fat free cream of chicken soup1- 10 oz.can (Rotel) diced tomatoes & green chilies2 cups 2% mexican four cheese, shredded18- 6" soft corn tortillas
Cook and shred 1.5 pounds boneless skinless chicken breast. Saute in a nonstick pan, or use cooking spray, with onion and Rotel.
Heat sour cream and soup, set aside.
Soften tortillas with moist paper towel in microwave.
Spray cake pan or cookie sheet that has sides with cooking spray.
Put about 2 tbsp chicken mix and 1 tbsp cheese in tortillas and roll up. Put on pan with the seam of the tortillas down.
Top with sour cream and soup mixture and remaining cheese.
Bake at 350 for about 30 minutes.
Makes 9 servings.
