Shrimp Cocktail (lower sodium version)

64 oz Low Sodium V80.5 C water1 oz El Pato spicy tomato sauce4 large cucumbers, peeled and diced3 large celery stalks, washed and diced1 medium carrot, washed1 medium tomato, washed and diced2 Pounds of Medium sized shrimp, cooked, peeled, tails removed
Makes 8 soup bowl sized servings (1.5 cups more or less)
Thaw and pull tails off shrimp, add to very large mixing bowl or stock pot. Add water, V8, and El Pato, stir. Add cucumbers, celery, and tomato. Use a vegetable peeler to add carrot pieces into bowl (like you are peeling it but not into the trash).
Serve with diced avocado and crackers (neither are included in the nutritional info).
