Ingredients
*100% Extra Virgin Olive Oil Cooking Spray, 0.25 gram(s) Mushrooms, fresh, 10 medium Green Beans (snap), 2 cupRed Ripe Tomatoes, 1 large whole (3" dia) Atlantic Salmon (fish), 3 oz *Lemon Juice, 2 wedge yields Salt, 1 tsp Pepper, black, 1 tsp
Directions
This is a salad made out of leftovers. Take cold steamed left over green beans dice into bite size pieces and place in a medium size bowl. Take leftover sauteed mushroom caps slice and place into bowl (may heat if prefer). Then dice a red ripe tomato and place it into the bowl. Flake the leftover salmon into the bowl. Taste. Add the juice of a lemon, salt, and pepper to taste. If you seasoned your food before you may not need anything. Makes 2 servings. You can also add other vegetables that you have on hand. I love cold, but you could reheat if you like.
