Ingredients
1 lb 93% lean ground turkey1 package stuffing mix 1/2 cup liquid egg substitute1 medium green pepper, chopped1 medium red pepper, chopped 1 medium onion, chopped (approx. 1 cup)1 cup water1 package taco seasoning mixSeasoning to taste--I use seasoning salt, black pepper, onion & garlic powders, minced garlic, and occasionally Worcestershire sauce (make to your taste and experiment!)
Directions
Mix all ingredients together. Place a scoop in 12 muffin tins--all of the mixture should be put into 12 tins.
Bake at 350 degree oven for 35 minutes.

    This is a wonderful recipe!! I loved it! I also really like the idea of portioning the meatloaf with a muffin tin. I made this with fat-free ground turkey and substituted homemade veggie broth instead of the water. I will definitely make this again...often! Thank you so much! - 1/11/09

    These are so quick to make and delicious! I used a box of Stovetop stuffing mix (turkey flavor) and a real egg with an extra 1/4 cup water. I also left out the taco seasoning since the stuffing was seasoned. Delicious!! The texture/moisture was perfect too. - 12/11/07

    These are amazing. granted I couldnt find my muffin tin so i made meatballs. I also used poultry seasoning instead of taco seasoning. And I added the dash of A1. Amazing. brought the leftovers to work and they were gobbled up! My boyfriend also loves them! Will make again and again! - 8/14/09

    I changed it up a bit. Added shredded carrots, no taco seasoning and made 5 large turkey muffins. Both my husband and my daughter LOVED them and said that we should have them all the time! This is definitely a keeper!!! - 12/9/07

    LOVE LOVE LOVED this recipe, I never used ground turkey before, I liked it better than regular meatloaf. Thought the muffin pan was a great idea. My 18 year old "hates" meatloaf and he actually liked it. HUGE HIT with the whole family ;-) - 1/13/12

    The next time I make I would cut the taco seasoning in half. I would also add chopped carrots and celery to this.

    Loved this recipe. Did not have stuffing mix, used dried bread crumbs. Seasoned with Bell poultry seasoning, worchestershire, minced garlic, chicken stock (no water or taco seasoning). Sprayed Pam on muffin tins. This is a recipe that you can alter to suit your taste. - 5/22/11

    These are great! I used old fashioned oatmeal instead of stuffing mix and I didn't have any problems with them being dry. I also turned them upsidedown for the last 10 minutes of cooking so the bottoms wouldn't be soggy. - 7/13/10
