Pasta with Salmon, Spinach & Tomatoes

10oz bag of fresh baby spinachGrape Tomatoes (around 2 cups cut in halves)one whole salmon filet1 cup of white wine3-4 Tbsp of Olive Oil6 large garlic cloves1/2 cup of freshly grated ParmesanHandful of chopped fresh basil(this is optional) You can add 1/2 cup of heavy cream for a wonderful cream sauce (add to sauce with fish & tomatoes)
Place your fish baking pan skin side down and Salt & Pepper your filet. Place it in the oven at 400 degrees for 15-20 min (or until it flakes easily with a fork). Remove from oven and flake off the meat and put aside in a bowl. Bowl your water for your pasta and prepare everything to make the sauce. Once you put your pasta in the water start your sauce, Heat the oil on high heat and add the garlic & fresh spinach. When spinach has wilted, had your wine and and reduce for about a minute or two. When your pasta has about 2 minutes to go, add your tomatoes and salmon back in the sauce and reduce heat to Med. Cook your pasta "Al Dente" and remove from the water with tongs and put directly into the sauce. Do not drain your pasta! You want some of the pasta water in the sauce. When you pasta in all in the sauce pan, add your Parmesan cheese and basil. Stir everything well and cook until the desired texture. Serve and Enjoy!
