Ingredients
1 small sweet potato1 tbsp olive oil1/2 onion1 tbsp garlic10 small asparagus spears3 large eggs1 cup milk ( I use homo for the essential fats)
Directions
Shred sweet potato, I peel the skin off, but you can leave it on for added vitamins. Mix with olive oil and spread evenly over the bottom of 8x8 baking dish. Bake at 350C for approximately 25 minutes. While that's baking, chop onion finely and saute in non-stick pan. Add Asparagus spears after about 2 minutes. Saute until onions are transluscent and asparagus are just a little limp. About 15 minutes. Add water to help it not stick, of for more flavor, add chicken stock! Set aside, and whip the three eggs and milk together. When sweet potato's are cooked, layer the asparagus mixture and then top with milk and egg mix. Bake an additional 20-30 minutes, depending on altitude and water content in asparagus! Serve hot or cold!
