Ingredients
Egg, fresh, 2 mediumOnions, raw, 25 grams Cheddar Cheese, 25 gramsRed Ripe Tomatoes, 25 gramsOlive Oil, 1 1tsp
Directions
Saute onions in the oil, beat the eggs and add to pan. Add the tomato and when almost set add the cheese and grill for a final minute.

    Really tasty with fresh tomatoes from the garden. I think I went overboard with the tomatoes this time, need to chop up the tomatoes more than I did. Can't wait to try this again. - 8/8/11
