Ingredients:Carrots, raw, 2 cups, large diceCelery, raw, 2 cups, diced (I like the inner leaves too)Onions, raw, 1 cup, dicedOlive Oil, Extra Virgin, 4 tbsGarlic, 3 cloves mincedCrushed Tomatoes, 822 gramsZucchini, 1.5 cup, large diceSummer squash, 1 cup, large diceCalabasa Squash, 1 cup, cubes (or any winter squash)Parsnips, 1 cup dicedCabbage, fresh, .5 head, small (about 4-1/2" dia) choppedBroccoli, fresh, .75 cup, choppedChicken Broth, 4 cups - (or vegetable broth to make it vegetarian)
Heat olive oil on medium high heat. Saute onions, celery, and carrots (5 min.). Add garlic, winter squash, parsnips and 1/2 cup of the broth. Saute another 5-7 min. Add all other ingredients and cook on medium-low heat for another 50-60 minutes.
