Chicken Barley Bake

Ingredients
4 Chicken thighs3/4 cup barley1 cup broth1tsp evoo1 cup broccoli1 onion, chopped1 clove garlic, mincedpoultry seasoning
Directions
Cook everything but the chicken on the stovetop, bring to a boil then empty into a cassarole dish. Place chicken on top, season with s&p, cover and bake at 350 for an hour.

    I added more broth/water, and I still had a few uncooked, crunchy barley kernels. Next time, I would cook the barley in the broth longer before adding any of the other ingredients. Tasted good! - 5/24/16
