Slow cooker Cranberry Pork Loin

* 1 2 pounds boneless pork loin roast * 1/2 teaspoon salt * 1/4 teaspoon pepper * 1 (16 ounce) can whole berry cranberry sauce * 1/2 cup Crasins (dried cranberries) *optional* * 1/4 cup honey * 1/4 cup orange juice * 1/8 teaspoon cinnamon * 1/8 teaspoon ground nutmeg
Slit roast own the center. If using a shorter cook time, cut roast into quarters. Rub with dry ingredients. Place roast on the bottom of your crock pot. Add cranberry sauce, honey and orange juice. Add Crasins, if you choose to use them. Sprinkle cinnamon and nutmeg on top (may add more closer to serving time). Cook on low for 4-6 hours. Serve sliced or shredded with juice on top. Thicken juice with cornstarch if desired.
