sugar snap pea salad with amazing ginger soy dressing

Ingredients
• 2 tsp dark sesame oil• 1 Tbsp minced peeled fresh ginger• Ό tsp crushed red pepper• 1Tbsp oyster sauce• 1 Tbsp low sodium (light) tamari soy sauce• 1 Tbsp sugar• 1 lb sugar snap peas• ½ cup julienned carrots• ½ cup drained sliced water chestnuts• ½ cup sliced mushrooms• ½ cup julienned red pepper• 2 tsp toasted sesame seeds
Directions
1. Heat sesame oil in a small sauce pan over medium low heat. Add ginger, sautι 2 minutes. Add garlic, red pepper flakes, cook 1 more minute. Stir in oyster sauce, tamari, sugar, salt. Remove from heat; cool.

2. Cook peas in boiling water for ½ minute. Drain and rinse with cold water. Combine peas, carrots, chestnuts, mushrooms, red peppers in a large bowl. Drizzle dressing over salad; toss well. Sprinkle with sesame seeds.

Serving Size: makes 5 - 1 cup servings
