3 C. sliced Zucchini3 C. sliced Yellow Summer Squash2 Eggs, beaten (or whisked)1 small Onion, chopped1/4 Green Pepper, chopped1 C. Mayonnaise1 C. Parmesan Cheese (dried kind such as Kraft's)1/2 tsp. Salt1 tsp. Black Pepper1/2 to 1 C. Dry Bread Crumbs
Slice squash and cook in very small amount of water until tender. Drain and set aside in large bowl. Beat eggs well and add onion, green pepper, mayonnaise, cheese, salt and pepper. Fold this mixture into squash.
Spray a 9 x 12 inch dish. Pour casserole mixture into it.
Sprinkle with bread crumbs.
Place in preheated 350 F. oven and cook for 45 minutes.
Serving Size: 9 x 12 inch pan. Makes 12 servings.
