Low-Carb Chicken Stir Fry

Ingredients
1 cup Water Chestnuts1 Cup Bamboo Sprouts1 1/2 Cups Mushrooms2 Cups Diced Celery1 Cup Grated Carrots3 Cups Sliced Onions2 Tbs. Olive Oil4 Tbs. Soy Sauce1 1/2 Cups Diced Chicken (Pre-cooked before adding)
Directions
Cook onions, carrots & celery in the olive oil until nearly tender. Then add bamboo sprouts, mushrooms and water chestnuts. When all are tender and warm, add soy sauce and precooked chicken. Serve over steamed grated cauliflower. (Or rice if preferred)
