Lentil, pea, mint & feta salad

Ingredients
1 cup brown lentils (approx 200g), soaked overnight, boiled 15min till tender but not soft1/2 (half) large salad cucumber, seeds removed, coarsely chopped (approx 150g)1.5 cups frozen peas, steamed1 round low fat Greek Style Feta cheese (approx 75g), crumbed1/2 tsp Salt1 tsp Freshly ground black pepperHandful of Mint leaves, well rinsed and finely chopped2 Tbsp Olive Oil, good qualityJuice of 2 lemons - approx half cup1.5 Tbsp Honey
Directions
Use hand blender (or whisk) to blend oil, lemon juice & honey.
Toss all other ingredients together and add dressing. Mix well. Refrigerate for min 2hrs for flavors to blend.
