High Fiber Pumpkin Chocolate Chip Muffins

Ingredients
1 c Whole Wheat Flour1 c Whole Oat Flour1 c Cooked Pumpkin4 Medium Eggs2/3 c Bob's Red Mill Oat Bran Cereal3/4 c Fat Free Sour Cream1 1/2 c Sugar1 t Salt1 1/2 t Baking Soda1/3 c Dark Chocolate Chips2 T Molasses1 T Ginger Root
Directions
Place the Oat Bran cereal through either a spice or coffee grinder to a fine flour. Mix all dry ingredients. Add all additional ingredients, and mix well. Place in a prepared muffin tin. Cook at 350 Degrees 20 - 25 minutes or until a toothpick inserted in the muffin comes out clean. Enjoy.
