Cauliflower Mashed Faux-tatoes

Directions
Clean and dice one head of cauliflower, boil as you would potatoes for mashed potatoes. When cauliflower is fork tender, drain water, put drained cauliflower back in boiling pot, mash, add one tablespoon of lite sour cream and one tablespoon of butter, mash to desired consistency. Salt, pepper, garlic, whatever, to taste!
