Directions
Eggplant, squash, zucchini, leeks, tomato sauce, garlic, onions, and fresh herbs.
Saute garlic and onions in olive oil
Slice & salt eggplants until they sweat
Start adding crunchier veggies first to the pot - like the zucchini's, leeks and bell peppers. Then the eggplant and squash. Stir in a little water to keep moist. Then add fresh herbs, stir some more. Once all are nice and soft, add the tomato sauce. Simmer until hungry.
